Spinach Mushroom and Feta Curry
Ingredients (Serves 6)
4 big onions
4 cloves of garlic
1 Whole Chilli
Spices
500g’s button mushrooms
200gm Spinach (frozen is good)
1 litre stock
Tom Puree
100g’s feta
Method
Cook down 4 big onions
Add 4 crushed cloves of garlic as onions are nearly there
Stir in a madras style powdered spice mix; cumin, coriander tumeric, cloves, star anis, fennel seeds, ginger, chilli
Add 500gs small or halfed button mushrooms
Add 200gm frozen spinach
Stir in stock & puree
Sit as a homogeneous stew for several hours
Add and stir in the feta before serving
